Sear, smoke, grill, marinate, dry rub, braise, broil, braise, and stir-fry, slice thinly for sandwiches, serve as steak or whole roast. Try it seamed and rolled with a stuffing mix inside. 


Tip: Before seasoning and grilling, marinade the whole steak to tenderise it. After grilling, slice thinly against the grain. This technique is great for social gatherings.
